Yep. We like eggs around here. Yesterday I made eggs salad sandwiches for lunch. The kids all asked if I was making Easter eggs. I think that’s how long it’s been since I made the last one ;) And, so I’m sharing my egg salad recipe. Here goes…
1/4 cup mayo
1 tbs mustard
1/8 tsp cayenne pepper
1 tbs dill pickle relish
1/4 cup chopped green onion
1. Cook eggs, cool, and peel.
*Tips: place eggs in water and then put on heat. When water reaches a boil time 12 minutes and turn off.
To cool faster place eggs in ice water.
Peel under cool water to aid in shell removal.
2. Mash all ingredients together using a potato masher
